Fast Fix Friday – Turtle Chocolate Chip Cookie Bars
I have to confess something to you. I love caramel. You can pour caramel over anything and I’ll eat it…well, ok, maybe not tilapia. If you take that caramel add pecans and chocolate then I know there is no way I can resist. Knowing this about me, it will come as no surprise that I love Turtle candies. One day I was getting ready to make some chocolate chip bars to take to a carry in. I’m sure they would have been a hit all by themselves, but then I thought what could I add to make these extra special? Something that people will remember. This is what I came up with…. turtle chocolate chip cookie bars. This recipe is so fast and easy that it will be hard not to make it ALL THE TIME. You probably have all the ingredients in your pantry already. All you need for this recipe is:
1 stick of butter
A yellow cake mix
1 Bag of semi-sweet chocolate chips
A jar of caramel sauce
¼ cup of pecans
First, preheat your oven to 350º F. Put the stick of butter into a microwave safe dish, put it into the microwave and melt it. I always do mine about 10 seconds at a time until it has just melted I don’t want it to bubble. Then I cracked the eggs into the melted butter.
You might want to temper the eggs first. Tempering the eggs sounds hard but it is very easy. Just take a little bit of the warmed butter and whisk them into the eggs. This will raise the temperature of the eggs then you can add the rest of the butter to the eggs. Tempering the eggs before you mix them in will ensure you don’t get scrambled eggs, especially if you let the butter go to long. You could also melt the butter and then do something else for a couple of minutes just to give the butter time to cool. I would suggest this might be a good time to grease your 9×13 baking pan. Once the eggs are in the butter give it a really good whisk.
When the eggs and butter are good and combined, add the yellow cake mix. Stir, stir, stir, and viola you have batter. Put the whole bag of chocolate chips into the batter. Fold it in the chocolate thoroughly. Now you are ready to put your batter into your prepared pan. Bake 20 -25 minutes checking to see when the top is golden brown. Remove it from the oven and let it cool.
Then, take your jar of caramel sauce, and warm it in the microwave. This will give it a little more of a fluid consistency. Take a fork and dip it into the warmed caramel. Work back and forth over the pan of cookie bars to drizzle caramel all over the top. I think doing it this way makes it look a little more “fancy”. Now, if I wasn’t lazy I would probably make my own caramel sauce. If you would like to make your own please feel free to do so. I just don’t see the point for this dish, especially since this is a fast fix recipe. Chop the pecans and sprinkle them over the caramel. There you have it! Turtle chocolate chip cookie bars. They even make a cute dessert when served with a scoop of vanilla bean ice cream over the top. Every time that I have made these they are a big hit. I hope they are at your house too!
